Dark Chocolate Blueberry Ice Cream

Servings : 8
Ingredients :
2 packages (6 ounces or 1 1/4 cup each) Blueberries
1 cup sugar
1/8 teaspoons salt
1 1/2 cups heavy cream
1 cup whole milk
1 tablespoon fresh lemon juice
3 ounces bar dark chocolate, chopped into small chunks (or 1/2 cup of mini semi-sweet morsels)
Directions :
Mix blueberries, sugar, and salt in a heavy saucepan over medium-high heat. Stir occasionally until sugar dissolves. Bring to a boil. Reduce heat and simmer 10 minutes. Remove from heat and let cool 20 minutes. Puree in a blender. Stir puree together with heavy cream, milk and lemon juice. Chill in refrigerator overnight. Pour into an ice cream maker and freeze according to manufacturer's directions. Swirl in dark chocolate by pouring small chunks into machine during last 5 minutes of freezing.

Blueberry Jicama Fruit Salad

Ingredients :
1 package (6 ounces) Blueberries
1 cup jicama cubes (1/4-inch)
1 cups seedless red watermelon cubes (1/4-inch)
1 cups seedless yellow watermelon cubes (1/4-inch)
3 tablespoons chopped fresh mint
Grated zest and juice of 1 lime
Fleur de Sel or coarse salt, if desired
Directions :
Combine blueberries, jicama, melon, mint, lime zest and juice in a medium bowl. Stir gently to combine.
Let stand 15 minutes for flavors to blend, or refrigerate until ready to serve. Serve salad in martini or margarita glasses, and sprinkle lightly with salt if desired.

Notes :
you can replace watermelon with red and green grapes cut in halves.






Breakfast Fatayers

Ingredients :
Puff Pastry
4 Eggs
200 Grams Cheddar Cheese
100 Grams Mushrooms
50 Grams Onion
50 Grams Green Bell Pepper
200 Grams boiled Chicken
Besides that, you can use any kind of meat and vegetable you like. The cheese is important. I strongly suggest you use it. It kind of acts like glue.
Directions :
In a bowl, mix together Cheese, Mushrooms, Onion, Green bell pepper  and boiled Chicken.

Roll out some puff pastry on a floured surface. You are looking to make a circle with about an 8 inch diameter. Make sure you rub some flour on your rolling pin too, so the pastry won't stick to it.
Put the omelet mix in the middle of the puff pastry circle and make a well.
Crack an egg into the well and season with salt and pepper.
Fold the pastry into you a triangle. If you find that the edges aren't sticking to each other very well, brush a little bit of water on the pastry.

Bake at 350 for about 7 -10 mins until the pastry is lightly brown. If you take it out earlier, the egg with be more over easy.
Tips :
The only tips I can offer on this recipe is the puff pastry. If possible, try to find puff pastry that is made with butter, not shortening.Be sure to transfer the puff pastry from the freezer to the fridge the night before so it will be thawed when it comes time to make them.

Spider Cookies

Ingredients :
2 Cups White Sugar
1/2 Cup Milk
1/2 Cup Butter
5 Tbsp Cocoa
2 Tsp Vanilla
3 Cups Oats
1 Cup Coconut
I have also heard these cookies called No-bakes (especially when peanut butter is added).
Directions :
Place a medium/large pot on your stove, mix White Sugar, Milk, Butter, Cocoa and Vanilla. Boil it for about 1 minute.Add oats and coconut and stir well with a wooden spoon.Put a sheet of wax or parchment paper on a cookie sheet or your counter top and using 2 soup spoons, scoop some mixture on to the sheet and then shape it into a mound on the paper.Let the cookies sit until they are completely cool, about 20-30 minutes.
Yep! easy as that, no need of baking. you can serve it with ice cream.
Notes :
The mixture is very hot, but it cools quickly so you have to work fast. One way of working fast is to use a small ice cream scoop. This is a very efficient way of doing it, but I like the look of the cookie better when you do it by hand.

Mixed Berry 3D Heart Cupcakes

Ingredients :
Heart Cupcakes :
2 1/4 cups cake flour, sifted
2 1/2 teaspoons baking powder
1/4 teaspoons salt
1/2 cups butter (1 stick)
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cups Driscoll's Strawberries, crushed
Icing for Heart Cupcakes :
2 cups confectioners' sugar
1/4 cups low-fat spreadable margarine
1 teaspoon vanilla extract
2 tablespoons fat-free milk
Decorations for Heart Cupcakes :
2 packages (6 ounces each) Driscoll's Raspberries
Confectioners' sugar, for dusting
We recommend using a Wilton Dimensions Mini heart shaped pan to create the unique top for these berry cupcakes.



Directions :
Heart Cupcakes :
Preheat oven to 350°F. Sift together flour, baking powder and salt. Combine butter, sugar, eggs, and vanilla in a separate bowl. Beat for a total of 3 minutes, scrapping the sides of the bowl. Add flour mixture to butter mixture, alternating with crushed strawberries. Beat 2 minutes. Pour batter into 2 greased and floured Wilton Dimensions 6-heart pans and one 12-cup cupcake pan. Bake 30 minutes, or until cake tests done. Turn out onto wire cooling racks to cool.
Icing for Heart Cupcakes :
Combine sugar, margarine, vanilla and milk until smooth and creamy in a large bowl, using a hand-held mixer. When cakes are cool, assemble heart cupcakes with round cupcakes. Use a quarter size dollop of icing on round cupcake bottom to attach heart-shaped cupcake as the top. Sprinkle heavily with confectioner's sugar. Spear center with three 4-3/4-inch Paddle Bamboo Picks, paddle side up. Attach three raspberries. (Or any cocktail pick with a topper that will allow the raspberries to fit securely on top.) Safety Note: Please be sure to remove the bamboo picks before eating.

Miniature Crab Cake

Ingredients :
Crab Cake :
1 Pound crab meat
¼ Cup finely chopped onion
¼ Cup finely chopped red bell pepper
3 Cups fresh bread crumbs
½ Cup mayonnaise
¼ Cup soft cream cheese
1 Tablespoon Dijon mustard
1 Egg
1/8 Teaspoon cayenne pepper
1/8 Teaspoon paprika
¼ Teaspoon salt
1 Tablespoon finely chopped parsley
Chipotle Sauce :
2 Whole chipotle chilies (canned smoked jalapeno peppers)
1 Cup mayonnaise
1 Tablespoon minced garlic
½ Cup chopped fresh parsley
¼ Teaspoon salt
Directions :
Crab Cake :
In a medium bowl combine the crabmeat, onion, bell pepper, 1 cup of the breadcrumbs. Mayonnaise, cream cheese, mustard, egg, cayenne, paprika, salt and parsley; mix until well blended.
Refrigerate for at least 1 hour.
Preheat oven to 375F degrees.
Spray baking sheet lightly with vegetable oil.
Place remaining bread crumbs in a bowl.
Form crab cakes about 1 inch in diameter.
Coat both sides with breadcrumbs and place on baking sheet.
Bake for 10 to 12 minutes and serve warm with a dollop of the Chipotle sauce recipe on top of each.
Makes 24 small crab cakes or 12 large crab cakes.
Chipotle Sauce :
Place all ingredients in a blender and blend until smooth. (Can be made ahead of time and refrigerated)
